Hi guys! First of all, I want to wish you all a merry Christmas! I hope you all had a lovely two weeks! I’ve taken last week off as I was pretty busy with finals. Rest assured, my exams are done now and I am off for a whole month! I’m planning on taking advantage of that time to work more on my blog and try to avoid having to miss posting in the future. Now that I’ve cleared things up, let’s move on to more fun stuff : my Christmas baking! I haven’t really talked about it much on here, but I quite enjoy baking. Recently, I’ve kind of put it aside, being busy with work and school, but I was really looking forward to get back on track during the holidays. The only thing is that the day right before I had my last exam, I was feeling pretty sick. Two days later, I had to go to the clinic, got diagnosed with a throat infection, got antibiotics and spent a few days in bed. Needless to say, I haven’t been able to bake as much as I wanted. I still got to bake a little though!
First of all, I have baked gingerbread cookies. I love gingerbread, and also love decorating those cookies! I used this recipe that I found on Pinterest. I had never tried it, but I find it quite tasty, though certain have found it to be quite ginger-y. I rolled out my dough on the thinner side, which left me with crunchier cookies, but the recipe also gives instructions to make softer ones, which I imagine could please many of you also. I had a few cookie cutters, such as a Christmas tree, a little man, a snow flake, etc. I did have fun cutting out other shapes, such as mittens, hearts and circles, with a knife, as I wanted to have more variety and didn’t have other cookie cutters. For the decoration, I have to admit, I simply got a tub of Betty Crocker vanilla icing. I put it in a piping bag and used a very small round nozzle. Here are the results :
The second thing I baked were chocolate cupcakes. I used the Ricardo recipe to bake them from scratch. The only thing I modified was the baking time, I took them out a little bit earlier, I would therefore recommend that if you guys bake this recipe, you should check them often to make sure not to overbake them. As for the decorating, I decided to recreate this Pinterest post. They were too cute not to give it a try! I made my own buttercream using Zoella‘s recipe from the video where she also recreate those cupcakes. The only difference is that she uses gingerbread cupcakes rather than chocolate ones. I had lots of fun making these! I also ran out of black icing, so I decided to just stick gingerbread cookies on the top of my three last cakes! Here are a few photos of the results:
Finally, I made brownies. Now, I know that it isn’t a classic Christmas recipe, but to make them a little more “Christmas-y”, I decided to cut them into little Christmas trees. For the actual brownies, I used my go to recipe when it comes to brownies, it never disappoints! I’ve never tried to frosting though. To decorate, I used the leftover frosting from my gingerbread cookies and put sone green colouring in it. I then used a medium sized round nozzle and just piped it into the brownie. I added a little star sprinkle on top to make it look even more like a Christmas tree! Here’s what it looks like:
